DUNDEE, n. [′dʌndi; as place-name dʌn′di]

1. Gingerbread (Lnk. 1927 (per Ayr.4)).

2. In combs.: (1) dundee dough, a baker's term: “a sponge set for cheaper bread-making which was allowed to lie for ten or twelve days, then stiffened up with flour until it made a complete dough” (Ags. c.1900 (per J. H. Macadam)); (2) Dundee steak, Spam, processed meat (Edb. 1990s). (2) Edb. 1994 Irvine Welsh Acid House 189:
He puffed on a cigarette as I was making a sanny: a piece on Dundee steak.

[From the place of origin, Dundee in Angus. In 1. a contr. for Dundee cake, a kind of cheap gingerbread cake formerly sold all over Scotland.]
