CROKAIN, n. A Scots sweet made with sugar, water and lemon juice (Sc. 1759 E. Cleland Cookery 145). For recipe see F. M. McNeill Scots Kitchen (1929) 161.

[Of doubtful origin. It has been suggested that it may be a contr. form of Fr. croque-en-bouche, a crisp cake, gen. made of nougat, hard sugar, and glacé fruits (Hatz. and Darm.).]
